The Wednesday June 7, 2023 AAA Nutrition/Wellness Committee meeting will be a hybrid meeting.  
Members of the public can either attend in person or virtually via Zoom.

B. Consideration of Minutes  
Minutes from April 19, 2023 meeting.  
A motion was made by WERNER, seconded by GENSON, that the minutes be  
approved. The motion carried by the following vote:

CLAUSIUS nominated WERNER to serve as Temp Chair. Other members present were  
not interested in the position and several people were missing.  
CLAUSIUS nominated GENSON to serve as Vice-Chair.  
A motion was made that the Election of Committee Officers be approved. The  
motion carried unanimously.

Speaker: Sarah Karleskint, Manager-Business Operations: Infusion Pharmacy and  
Community Health Services  
Sarah showed a power point summarizing the amount of meals they served in 2022 and  
so far in 2023.  
E. Reports to Committee  
1. Post RFP and Catering Update  
Atlantis Valley Foods – upon board approval – starting Sept 1 – we plan to have them  
service Oregon, Fitchburg, Stoughton, McFarland, Cambridge, and in Madison –the  
Romnes Apartments, Madison Senior Center, Messiah Lutheran Church, Warner Park  
Recreation Center, Meadowridge Commons, and Good Shepherd Church. This is a large  
service area, so we knew we needed a large caterer and that’s exactly who Atlantis Valley  
Foods is. They are a locally owned and operated, for-profit food service contractor based  
in Cottage Grove. They have a gigantic commercial kitchen and lots of available human  
resource support (A minimum of 6 individuals available to work with accounts). They  
serve customers across Southern Wisconsin, including metro Milwaukee and Northern  
Illinois. They provide all forms of employee food service including Micro-Markets,  
Contract Cafeteria/Dining, Catering, Office Coffee, Vending, and other related services  
for businesses and institutions. Atlantis Valley Foods produces upwards of 30,000 fresh  
food offerings and entrees per week supplying fresh food to their Micro-Markets and  
dining operations throughout their territory. Atlantis Valley Foods currently services over  
350 Micro-Markets across our region and operate a distribution network of over 50  
delivery vehicles.  
Main Street Market Piggly Wiggly in Belleville will service the Sugar River Senior Center.  
We plan to have them start August 1st. Since this is a smaller contract, we’re not waiting  
on any board approval, but instead we’re waiting on the contract to be finalized and then  
sent to Piggly Wiggly for their review and sign-off. Upon touring their full service  
supermarket, catering department, kitchen, deli, storage, fridge, and freezer space –  
they have everything necessary to successfully provide meals for the Sugar River Senior  
Center. The owners if this store, also own stores in Lodi, Waunakee, and Poynette, and  
receive store deliveries from the Piggly Wiggly Midwest warehouse and other various  
vendors several times a week, making supply chain issues minimal. The store owners  
and staff are so excited to be partnering with Senior Nutrition – they are passionate about  
serving quality, enjoyable meals to older adults.  
TnT’s Catering in Middleton will service the Middleton Senior Center and Mount Horeb  
Senior Center. Plan is to start August 1st. Again, this is a smaller contract, so we’re not  
waiting on any board approval, but just waiting on the contract to be finalized, and then  
sent to TNT Catering to review and sign off. TNT Catering has been handling meals for  
many older adult programs – they’ve provided meals for senior apartments in Middleton,  
Madison, Verona, Fitchburg, and McFarland for many years for their holidays and special  
events. They’ve been providing meals for The Beacon, homeless shelter, home delivered  
meals for the Verona Senior Center since 2020, and just recently helped out SSM Health  
during their emergency time of need after losing a caterer, and were providing home  
delivered meals for a section of Madison. They have plenty of experience, space, and  
staff to service these two senior centers.  
NWDSS partnering with Lancaster’s Piggly Wiggly in Cross Plains – they just started  
June 1. They are very excited to be partnering with a local store and are working together  
to make this a success.

Menu patterns for each new caterer, policies, and operations  
Nutrition Counseling – On average provide 4-5 nutrition counseling sessions per  
month. Most  
mother survive on just drinking 4  
supplement in addition to those drinks. Can you imagine  
recently topics focused on post abdominal surgery – can my  
Ensure per day – what nutrients should she  
not having access  
to a dietitian post surgery? Also Diabetes management and unintentional weight  
loss post diabetes diagnosis as the individual was terrified to eat anything.

Senior Farmers’ Market Voucher Program – We have 740 voucher sets ($35 worth) to  
distribute. Program started on June 1st. So far we’ve mailed out 622 sets of  
vouchers or $21,770 towards.

4. Chair & Staff Updates  
AAA Clerk Cindy Matulle thanked Bill Clausius for all of his years serving not only Dane  
County but our older adults.
